Me=Housewife?

ME! A housewife? I know, I know! Many of you wouldn't believe it but rub your eyes, blink your eyes, and look again my friends. The kitchen and I have had many frequent date nights together in the past 2-3 months and meals are coming out mighty delicious to my surprise-that means, not ruined and editable! Last night, another good one on the menu and I can only thank my mother-in-law for a delicious recipe!

Chicken-Enchiladas

3 cooked chicken breasts
1 package taco mix
2 cans stewed tomatoes

Mix three ingredients together in slow cooker. You can put it on high or low depending on your need. I put it in for 6.5 hours on low. Then in another bowl, mix a can of cream of chicken and some milk until smooth. Add in juice from the slow cooker. Spoon sauce on bottom of glass pan. Use flour tortillas and roll the chicken in the tortilla. Add more sauce on top with chopped green onions, olives, and shredded cheddar cheese. Bake for 20 minutes at 350 degrees.
